Rebus udang basah terlebih dahulu. Kemudian toskan airnya asingkan ketepi. Ambil kepala udang dan kisar. Kemudian ambil air kepala udang tadi satukan dengan air rebusan yg sedia ada.&lt;br /&gt;&lt;br /&gt;2. Panaskan minyak masak dan tumis bahan kisar seperti bawang merah/putih/belacan.&lt;br /&gt;&lt;br /&gt;3. Setelah naik wanginya masukan air rebusan udang yang telah disimpan tadi.&lt;br /&gt;&lt;br /&gt;4. Masukkan sos cili/tomato, garam, gula dan serbuk perasa.&lt;br /&gt;&lt;br /&gt;5. Untuk sayuran tadi sawi dan taugeh hendak lah dicelur terlebih dahulu. Begitu juga dengan mi kuning.&lt;br /&gt;&lt;br /&gt;6. Setelah selesai semuanya hidangkan bersama bawang goreng, daun bawang, hirisan tahu goreng dan daun sup. Panaskan minyak. Tumis bawang putih sehingga kekuningan. Masukkan tepung jagung. Kacau sebentar. &lt;br /&gt;2. Kemudian masukkan air, sos tiram dan serbuk pati ayam. Apabila kuah mendidih, masukkan daging, ayam, udang dan sotong. &lt;br /&gt;3. Kemudian, masukkan garam, gula dan serbuk lada putih secukup rasa. Ayam dibersihkan. Kalau menggunakan ikan maka ikan seeloknya hendaklah dikukus terlebih dahulu supaya tidak hancur. &lt;br /&gt;2. Panaskan minyak, masukkan bahan cili yang sudah digiling dan juga rempah kurma. Tuangkan santan dan kacau hingga hampir mendidih. Api jangan terlalu besar. &lt;br /&gt;3. Masukkan ayam dan biarkan kuahnya pekat sedikit. Kacau selalu. &lt;br /&gt;4. Bubuh garam, sedikit gula dan masukkan cili merah tadi. Jangan dibuang tangkai cili tersebut. Kalau anda ingin lebih pedas boleh masukkan sedikit cili padi. &lt;br /&gt;5. Panaskan air dan biarkan mendidih sebelum dimasukkan spageti. &lt;br /&gt;2. Bila lembut dan hampir diangkat masukkan minyak di dalamnya. Toskan. &lt;br /&gt;3. Letakkan ramuan-ramuan laksa sebelum dituangkan kuahnya. &lt;br /&gt;4. Makan dengan sambal cili ( cili merah &amp; belacan ditumbuk dan masukkan sedikit garam). Sedap dimakan ketika panas.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;Cara menyediakan kuah :&lt;/strong&gt;&lt;br /&gt;&lt;br /&gt;1. Ikan direbus dan ditoskan airnya. Simpan airnya untuk dijadikan kuah. &lt;br /&gt;2. Buangkan tulang dan masukkan ke dalam pengisar. Kisar halus. &lt;br /&gt;3. Panaskan minyak dan tumis bahan yang telah digiling. Tuangkan santan ke dalamnya. 4. Masukkan serai dan daun kesum. &lt;br /&gt;5. Masak di atas api sederhana. Bila nampak sedikit perang, masukkan 1 sudu lagi air. Masaklah sehingga perang. Tuang ke dalam loyang. Ketepikan. &lt;br /&gt;2.Masukkan telur dan kuning telur ke dalam mangkuk. Sambil dikacau masukkan gula sedikit demi sedikit. Kacau dengan perlahan sehingga sebati. Jangan biarkan berbuih. &lt;br /&gt;3.Dalam periuk lain masukkan susu dan esen vanila. Panaskan sehingga 60 degree. Jangan sampai mendidih. &lt;br /&gt;4.Dengan susu yang masih panas lagi, masukkan sikit demi sedikit susu ke dalam telur tadi. Kacau sehingga sebati. Tuang ke dalam loyang yang ada karamel tadi. &lt;br /&gt;5.Tutupkan loyang dengan 2 lapis aluminium foil. Kukus dengan api sederhana selama 30 minit &lt;br /&gt;6.Atau boleh juga dibakar di dalam oven. Tapi perlulah diletakkkan air suam ke dalam dulang pembakar. Bakar selama 40-45 minit pada suhu 150 degree. &lt;br /&gt;7.Bila dah masak. Jangan buka aluminium foil. Biarkan 5 minit. Masukkan spaghetti apabila air mendidih dengan sedikit garam. Bila pasta lembut, angkat dan toskan. &lt;br /&gt;2.Dengan menggunakan api sedang, tumis bawang besar dan bawang putih dengan minyak zaitun. Jangan ditumis garing, cukup sekadar bawang layu. &lt;br /&gt;3.Masukkan daging ayam, kacau hingga nampak kesemua daging ayam telah masak. &lt;br /&gt;4.Masukkan capsicum, carrot dan cendawan dan tomato. Kacau rata. &lt;br /&gt;5.Masukkan lada hitam, daun parsley, herba oregano (jika suka), dan taburan kiub ayam. Kacau sebentar dan tutup api. &lt;br /&gt;6.Ambil spaghetti yang telah direbus tadi, masukkan dalam kuali yang dimasak ayam tadi (masih panas). Toskan hingga rata. &lt;br /&gt;7.Masukkan perahan lemon atau cider vinegar, dan toskan spaghetti lagi. Perasakan garamnya, jika kurang masin, taburkan sedikit garam dan toskan lagi. Jika suka pedas, boleh tambah chilli flakes atau lebihkan lada hitam. &lt;br /&gt;8.Mesti dihidang terus, panas-panas. &lt;br /&gt;9.Tips : Minyak zaitun yang digunakan agak banyak kerana ia menjadi base sauce yang menyalut spaghetti. Bila air mendidih baru masukkan pasta. Kacau sekali-sekala dan masukkan satu sudu teh minyak zaitun (atau minyak masak) agar pasta tak melekat. Bila pasta sudah lembut angkat dan toskan. &lt;br /&gt;2.Buat inti daging. Goreng bawang besar dan bawang putih. Jangan dibiar garing, cukup sekadar bawang layu. Kemudian masukkan daging cincang. Goreng hingga daging keperangan. &lt;br /&gt;3.Masukkan carrot, cendawan, lada benggala (capsicum) dan celery. Kacau sebati. &lt;br /&gt;4.Masukkan tomato puri. Jika nampak terlampau kering masukkan sedikit air. Jangan sampai berkuah pula. &lt;br /&gt;5.Masukkan kiub ayam/lembu (hancurkan dan tabur, jangan masuk seketul) herba Oregano dan Bay leaf. Biar mendidih dan naik bau. &lt;br /&gt;6.Masukkan gula dan garam secukup rasa. Garam tak perlu banyak sebab stok dah masin. Bila nampak pekat dan agak kering, tutup api dan ketepikan. &lt;br /&gt;7.Buat sos putih. Masak butter atas api kecil (jangan sampai perang). Bila semua butter dah cair dan berbuih, taburkan tepung gandum, kacau cepat-cepat dengan senduk kayu. Kacau dalam 3-4 minit, kemudian masukkan susu segar. &lt;br /&gt;8.Masukkan garam dan serbuk lada hitam. Kacau hingga nampak sos sudah bersalut di belakang senduk kayu (agak pekat ). Tutup api. &lt;br /&gt;9.Cara melapis : Dalam bekas tahan panas (saya guna Pyrex. Pakai loyang kek pun boleh, tapi kalau pakai Pyrex boleh angkat terus hidang), mulakan dengan lapisan pasta, tabur rata. Lepas tu lapisan inti daging, kemudian ratakan sos putih. &lt;br /&gt;10.Teruskan melapis dan akhiri dengan taburan parutan keju di lapisan paling atas. &lt;br /&gt;11.Bakar dalam oven suhu 190 darjah Celcius selama 30 minit atau sehingga keju cair dan keperangan. Biarkan hingga semua nasi bertukar jadi bubur.Kacau seberapa kerap yang mungkin untuk mengelakkan hangit. &lt;br /&gt;2.Masukkan bawang kecil yang telah dimayang dan halia ke dalam periuk. &lt;br /&gt;3.Masukkan garam apabila perlu dan rasa. &lt;br /&gt;4.Bila semua nasi dah jadi bubur, masukkan santan cair dan kacau.Kemudian masukkan santan pekat dan kacau lagi sampai jadi bubur yang sedap. &lt;br /&gt;5.** bahan untuk perencah(ditabur) &lt;br /&gt;6.Buat bawang goreng sendiri, lebih harum. Tumbuk bawang merah, halia, garam dan sedkit gula. Masukkan isi ikan dan tumbuk lagi sehingga hancur.&lt;br /&gt;2. Masukkan bahan-bahan ini ke dalam kuali dan sangai hingga kering.&lt;br /&gt;&lt;br /&gt;&lt;strong&gt;CILI PADI JERUK&lt;/strong&gt;&lt;br /&gt;1. Cili padi anggaran 1 mangkuk kecil, dibuang tangkai.&lt;br /&gt;2. Campurkan 1 camcateh garam, 2 sudu besar gula dan ½ cawan cuka.&lt;br /&gt;3. Tumbuk bawang dan halia hingga lumat. Masukkan garam, gula dan serbuk perasa dan akhir sekali ikan. Tumbuk lagi hingga lumat.&lt;br /&gt;2. Campurkan ke dalam kelapa parut dan sebatikan.&lt;br /&gt;3. Sumbatkan ke dalam lada yang telah dibuang biji tadi.&lt;br /&gt;4. Susunkan ke dalam periuk. Bancuh tepung beras bersama air kapur, serbuk kunyit, garam dan air secukupnya. Pekat cairnya seperti menggoreng pisang.&lt;br /&gt;2. Panaskan minyak.&lt;br /&gt;3. Rupanya seakan-akan bunga seri pagi yang warna biru tu dan buahnya seperti kacang sepat. Bila dimasukkan ketika nasi mendidih, bunga tersebut akan terus mencair dan menghasilkan nasi berwarna biru. Kukus sehingga ia empuk.&lt;br /&gt;2.Sementara itu tumiskan sedikit minyak, dan tumiskan bawang.&lt;br /&gt;3.Setelah bawang naik bau masukkan daging dan bubuh sedikit garam dan lada sulah.&lt;br /&gt;4.Kentang yang telah empuk disapukan sedikit mayonis pada bahagian yang dibelah tadi.&lt;br /&gt;5.Kemudian sumbatkan dengan daging tadi. Basuh ikan patin hingga bersih. (Basuh dan rendam dengan limau nipis, asam gelugur/asam keping dan tepung gandum selama sejam untuk menghilangkan hanyir. Buang duri/bisa ikan patin yg ada dekat insang semasa basuh ikan.)&lt;br /&gt;2. Tumbuk bawang merah, kunyit hidup, lengkuas dan cili api hingga lumat. serai diketuk.&lt;br /&gt;3. Masukkan air secukupnya di dalam periuk dan masukkan serai, bahan-bahan yang telah ditumbuk tadi bersama dengan tempoyak serta asam gelugur. Biarkan mendidih.&lt;br /&gt;4. Masukkan ikan satu persatu. ( Hati2, tekstur isi ikan patin lembut)&lt;br /&gt;5. Selepas itu, masukkan bunga kantan, daun kesum dan masukkan garam secukup rasa.&lt;br /&gt;6. Ayam di potong kecil-kecil. Basuh bersih ayam tersebut dan lumurkan sedikit sahaja garam.&lt;br /&gt;2. Panaskan minyak dan goreng ayam tersebut selama 10 minit (agak-agak masak). Ayam dibersihkan dan dilumur dengan rempah yang telah dikisar.&lt;br /&gt;2. Kemudian ayam diperap selama 30 minit, sebaiknya kalau boleh perap semalaman rasanya rempahnya akan lebih sebati dengan ayam.&lt;br /&gt;3. Panaskan ketuhar pada suhu 170 – 180’C.&lt;br /&gt;4. Panaskan minyak dan tumis kan bawang merah, bawang putih, halia, kayu manis dan bunga lawang hingga naik bau.&lt;br /&gt;2. Kemudian masukkan serbuk kari, cili kisar dan tambahkan sedikit air.&lt;br /&gt;3. Masukkan kentang dan biarkan hingga kentang hampir empuk.&lt;br /&gt;4. Jangan lupa untuk tengok selalu kari anda, jika agak-agak kering, tambahkan lagi sedikit air.&lt;br /&gt;5. Bila kentang sudah sedikit empuk, masukkan santan dan air.
